Default Cheese Crackers...yes you heard me right!

This recipe is not my own, for I found it at the Suzanne Somers website (btw, poster pneuman has phenomenal recipes at the community section of that website http://www.suzannesomers.com

They suggest placing them on freezer paper, I use a microwaveable soup bowl....

Take 2 oz of any type of cheese (jalapeno monteray jack, cheddar, mozarella, whatever) and put in soup bowl...microwave for 3 min (more or less)...run a spatula under it to lift it out...and VOILA....after it cools...it will be crisp as a cracker...great with salsa , as croutons, etc!

I'm sure some of you savvy low carbers can think of a multitude of variations...that's my challenge to you!

...btw some people just do this with an american cheese slice...I prefer just cutting a big chunk of whatever cheese(s) I have around...great snack!

You can also do this with pepperoni slices and genoa salami... place on microwave safe plate, with paper towel underneath meat and nuke for a few minutes... you get a crunchy cracker like product that you can dip or smear cream cheese on.

WHAT AN AMAZING IDEA! , Nat!!!

I've been looking for something to put cambozola and St. Andre cheese on...what a great suggestion!

We need those fast quick things once in a while...I find I really am a slave to the kitchen...and I hate doing dishes LOL.

My favourite cheese crackers are havarti pieces nuked on parchment paper. Even my "high carb" friends love em.

I bake mine on parchment and put a few pumpkin seeds and black pepper on top. Super num-nums!

Please answer a question which has nagged me forever. Pumpkin seeds...are they to be eaten with or without the shells!?

You can eat them either way. Shelled are good for baking and with shells are good for nibbling. When I eat the roasted, salted, shell on variety, I usually eat half with the shells and half without for the fiber!

Yes!
My teenage daughter used to nuke her cheese slices til they were crisp and a lovely golden brown.... and process cheese slices make great "cheese-burger" buns . So quick. One slice on a greased plate for 40 sec in the microwave allows them to still be pliable. Do the cheese slices first and then heat your hamburger patty. The only drawback is that you can't add a lot of moisture...or they want to disintegrate. 'Eat 'em fast'!

Wow, these things are great! I enjoyed some veggie dip with my chedder cheese crispies. It felt like I was cheating they were so good! I'm going to go buy some jalapeno cheese tonight and eat them with pepperoni.
