Stuffed Chicken and Mushrooms
Ingredients
4 Chicken Breast
1/4 cup White Cooking Wine (Holland House)
2oz Canned Mushrooms sliced
1/4 Onion Sliced
2oz. Shredded Cheese (your choice; my fav is pepperjack w/jalepenos)
4 strips of thick sliced bacon- PRE COOK
1 TBSP Olive Oil
1 TBSP Butter
2 tsp Seasoned Salt
2 tsp Garlic Powder
Mix white wine & olive oil and set aside. Stuff breasts with w/pre cooked bacon ( nuke them for 3 min 20 sec), cheese, and mushrooms. Place in caserole dish Season the top of the breasts with the seasoned salt and garlic powder. Lay slices of onions and mushrooms on top of each breast. Pour the wine and olive oil evenly over all breast. Cover tightly with aluminum foil and place in pre heated oven (375) for 40 minutes. Remove foil and place back in oven for an additional 10-15 minutes. AWESOME!
