Thumbs up ** Mexican Chicken Suiza **

I threw this together last night for dinner, trying to replicate my favorite dish at a local restaurant. Turned out wonderfully!

Chicken Suiza

Non-stick spray
4 thawed, boneless chicken breasts
2/3 cup sour cream
1.5 cup monterey jack cheese
1 small can, chopped mild green chiles
1 small can, sliced black olives

Spray a square baking pan with non-stick spray. Lay chicken breasts in pan.
Mix sour cream, 1 cup of cheese, green chiles, and olives together.
Spread over the chicken, cover with foil. Bake at 350 for 45 minutes.
Uncover, stir, sprinkle with remaining 1/2 cup of cheese, and bake until cheese is brown and bubbly (another 10-15 min).

I just served mine on the plate with the sauce spooned over it, but you can also shred the chicken, mix with the sauce, and stuff it in LC tortillas.

**I estimated the carbs to be around 3.5-4 per serving, serves 4.
6 for the sour cream, 2.5 for the cheese, 3 for the green chiles, and 3 for the olives.

ps. the sauce will thicken upon standing, be sure to mix it well before topping with the remaining cheese.
