Default Thai-style Tuna Patties

This is my adaptation of Rick Stein's Thai Fish Cakes with Green beans. Tuna is just more affordable.

425g/14 oz can tuna
Chopped chilli - to your taste
Zest of 1 lime
Squeeze of lime juice
2 eggs
1 teaspoon Canadian Sugar Twin (or 1 tsp Splenda)
Splash fish sauce
1 tbsp red curry paste
30g/1 oz green beans, sliced into thin rounds.

Squeeze as much moisture as possible from the tuna. Place in bowl and mix well with all other ingredients. Sautée in oil of your choice. The patties will be "wet" and so you'll need to take care not to have the hot fat spit at you.

These are equally yummy cold the next day.

Carb count will depend on the curry paste you use, but will be very low.

I've since made these, and just plain tuna patties too, with just one egg instead of two, and a couple of tablespoons or so of mashed cauliflower. The cauli seems to help the texture quite a bit. You still need some egg though, because the cauli alone doesn't seem to bind the way mashed potato does.
