Here's a quick recipe that you can knock up fast and freeze, for those nights when you want fast food!
CHICKEN NUGGETS
1 kg minced chicken
4 - 5 slices grainy low carb bread [make into fresh bread crumbs]
1 medium onion [finely processed] or 1-2 tspns onion powder
1 tspn chicken stock powder
ground black pepper
3 beaten eggs
2 Tblspns red curry paste
3 extra beaten eggs }
soy flour & low carb breadcrumbs}
Mix first 7 ingredients together.
Shape into chicken nugget sized balls and flatten slightly.
Roll in soy flour, egg, then breadcrumbs.
Place on trays covered with parchment paper and freeze.
When frozen, place in snaplock plastic bag.
Cook from frozen..{shallow fry}
Makes about 60
