Default Fried Chicken Patties - like BK fried chicken sandwich

I miss the breaded and fried BK chicken sandwich so much, I had to come up with a low carb solution...and here it is - inspired by Dana Carpender's recipe for Salmon Patties in her cookbook "500 Low Carb Recipes".

Ingredients:

1 can (10 ounces) white chunk chicken
1/4 cup oat bran
1 egg
salt & pepper
3 tbsps butter

Steps:

1. Drain the chicken, place it in a mixing bowl and mash it well.
2. Add the oat bran, egg, salt and pepper to taste (for best results add more pepper than salt) and mix well. Form into 4 patties.
3. Melt the butter in a skillet over medium heat. Saute the patties in the butter, turning carefully, until very golden on both sides. This should take about 7-10 minutes for each side. Voila!

This yields 2 servings, each with about 7 net carbs (9 grams of carbs - 2 fiber grams).

I like to top mine with mayonnaise and tomato slices.

Yield: 2 servings

Tried this tonight -- extraordinarily easy and quick to make. Tasty too! I think next time I'll try adding different spices to the mix and maybe top with Ranch dressing. Maybe even form into smaller sections and serve over a salad. Yum! Thanks for the recipe.

Oh man, this was delicious!!! I used almond flour instead of oat bran (had some leftover from holiday baking), and ran 'em through the Foreman grill for only about 3 minutes. Topped with mayo and shredded lettuce, they're just perfect! With the almond flour and no butter, the entire batch "cost" only about 14 carbs. Okay, maybe 16 by the time I added toppings. Still, I ate all four little patties with no guilt! Thanks so much for sharing - even though it was a long time ago...LOL!

Oh. My. God. I just made these(substituted lc baking mix for the oat bran) and my tastebuds are in heaven! All these great recipes here are really helping me get my diet back on track. Thanks to all!!!!!

oh wow.. i gotta try this one.. cut in 1/2 and wrap in a lo-carb tortilla with some ranch dressing... YUM.. gotta try it!
i wonder if you can use homecooked (baked or boiled) chicken?

These were really good!

I made them with the oat flour although next time I might try something different or add less of the oat flour. I think I will also try added mined onion, celery, peppers, garlic, etc. Hmmm... some cheese might be good as well.

I served them with a big salad with avacado. I took one and cut it up to put on top of the salad. This was awesome! I think I will make a bunch up to have on hand to top salads for a quick meal. The other three I topped with a cream sauce that I made (cream, garlic powder, onion medley, salt, and pepper... reduced until thick). It was a really nice meal.

So... today I made another batch and these were even better.

I used 2 T ground golden flax instead of the 1/4 cup of oat flour. (This way the carbs are much less... I get my fiber and my flax in...) I also added some minced onion. I used a small cookie scoop to scoop a ball into the frying pan and then flattened it with a spatula. I used them on top of a salad and saved the other half for another salad tonight or tomorrow.
One of my husband's (and my) favorite meals is a Chicken Tender Salad. Of course, the chicken tenders that I use for my husband are high carb breaded tenders. Today at lunch, I could not really tell the difference in taste and texture from the real thing. I was so excited!

Petrina, thank you so much for posting this recipe! It's definitely a keeper for me - quick, easy and tasty - what more could you ask for?! I make mine and dip them in some Chipotle Mayo (mayo, chipotle powder, onion powder). Makes a terrific snack, lunch or dinner!! Wonderful recipe!

I made these today and found them EXTREMELY delicious!

Some changes I made:

Omitted the Oat Bran and used 2 TBS. Flax Meal
Added minced onion and lots of pepper NO salt.
Made a mayo/mustard dipping sauce.

A must try!!!!

Yes, sorry if I wasn't clear.

I mixed mayo and yellow mustard together and used it as a dipping sauce. I normally do this for shrimp too and it's wonderful with butterfly pork chops. Heck, it's great with everything but cheese. LOL

Hmmmmm...... have you tried it with cheese? I'll bet that would be good too - at least I used to like cheeses in sandwiches with mayo and some cheeses were good with mustard - I know .... weird!

I never thought of mixing mayo and mustard together. I'm not much of a cook. These appeal to me because they use canned chicken which I could keep on hand.
