Default Found a great LC Flax Muffin recipe

Was getting frustrated with finding a great flax muffin recipe that I can afford to make , as the one we have posted uses alot of the shake mix, which is about $27 in Vancouver. I believe I found the only LC one in any of the Flax info. areas in the net! After you hit page be sure to scroll down a bit to see it.

Hi Leigh - I made these last night and they are awesome - as good as any bran muffin I ever ate - better than any bran muffin I ever made :

Thanks for sharing - BTW - I made 6 large muffins, used pecans (what I had on hand) and they came to 455 calories and 1.5 carbs per muffin. Great for breakfast this morning.

Hi Leigh - Actually they are so good I am making them again this weekend. I took two of them with me on my trip to Seattle and used one for breakfast with my eggs and one to eat on the plane home when everyone was eating pretzels! They really are terrific.

These are great. I didn't have the maple so used extra vanilla and E. walnuts. I wonder if you could put some pumpkin in and have like pumpkin bread? Might have to try that one next. Guess you can, I just found on quick meals and snack a reference to this recipe and someone used pumpkin and another person used zuchinni. Yum. Glad you found this recipe!!! I have added the link to the thread I found as it has a couple of other recipes that don't use the shake mixes.

Wow - I never even thought about the pumpkin or zucchini - I did think about using ginger since I could imagine these as gingerbread with some lovely whipped topping. Now I can't wait to try them with pumpkin and zucchini. I had some toasted with butter for breakfast this morning and had a whole new wonderful taste experience. My DH likes them with cream cheese!

I never thought of cream cheese! Where is my brain today? How many do you eat in a day? These could fit nicely as breakfast or snack.

Hi - The first time I made them I made 6 big ones - 455 calories and ~ 1.5 -2 carbs each. The next time I made 12 - they are more like cupcake sizes with 12, but still a good size. The benefit of the smaller size is I can have one for breakfast and one for a snack in the afternoon. I use Xylitol and subtract the sugar alcohol. You can use Splenda, which I think most people do. it makes a nice change from eggs and bacon.

My count came out different. What did I do wrong?

0 - 6 tablespoons melted butter
2.5 - 3 large eggs
1 - 1/4 cup Whipping Cream 35%
12 - 1/2 cup sweetener, Splenda bulk
4 - 2 tablespoon vanilla extract
2 - 2 teaspoons ground cinnamon
1 - 1 teaspoon ground nutmeg
1 - 3/4 teaspoon baking powder
0 - 3/4 teaspoon baking soda
10 - 1 cup Flax Seed Meal
0 - 1/4 cup baking mix
8 - 4 ounces chopped walnuts -- optional

Comes to 41.5 with the fiber subtracted. For 12 that would make the count 3.45 or 3.5. Please tell me what I did wrong. Thanks in advance.

I used fit day and created a custom food using the ingredients to come up with my total. On your version above, it could be the splenda - that adds carbs whereas the Xylitol does not. Walnuts are also higher than pecans. Eggs would be 1.8 for three, not 2.5. My flaxseed meal is net zero although I know that fit day counts flax seeds as having some carbs. It has so much fiber it has not seemed to create a problem even though I have eaten them daily for almost a week.

Hi Skinnbones - I am with you. I try not to make this any harder than I have to. As much as I want to lose weight, I would rather do it a little slower and enjoy things (although I DO get impatient ) than give up something that makes it easier to lose in the long run.

Default Pumpkin addition and liquid Splenda

To Skinnbones, thanks very much for posting the additional recipes, those look good.

Just wanted to mention that www.LowCarbLuxury.com (pretty sure it was that one) had a good recipe for pumpkin bread, but it might be in the newsletters, so must check (it would be the fall ones). Will post when I find it.

Also, slightly off topic, wanted to make sure that everyone (in Canada) knows where to get liquid Splenda--found it in another forum here (I just love this place!) Just go to www.low-carbing.com (not sure of hyphen, try both ways). Was very excited about that find!

Hi - The brand of Xylitol I use is called Miracle Sweet and it measures spoon for spoon like sugar. It is granulated and really looks like sugar. Hope that helps. PecanPie
