Default Spinich-Stuffed Tomatoes

I made these last night. OMG so good!
6 medium tomatoes
3 TBS butter, divided
1 10 oz. package frozen chopped spinich, thawed and drained
1/2 c. Atkins Bake Mix (or whatever "binder-type ingredient you want to use)
1 tsp Italian seasoning
1/2 c. shredded mozzarella
1/8 tsp. garlic salt
1/8 tsp. pepper

Cut a thin slice off the top of each tomoto. Scoop out pulp, leaving 1/2 in. thick shell. Invert tomatoes onto paper towels to drain. Meanwhile melt 2 TBS butter in a skillet. Add spinich; cook and stir 7 minutes. In a bowl combine bake mix and Italian seasoning. Set aside 1/4 c. for topping. Add spinich and cheese to remaining crumb mixture. Sprinkle tomato shells with garlic salt and pepper; stuff with spinich mixture. Place in a greased 13x9x2 baking dish. Melt remaining butter; toss with reserved crumbs. Sprinkle over tomatoes. Bake, uncovered, at 350 for 20-25 minutes or until crumbs are lightly browned.

Ok FitDay stats (will differ if you use soy flour or whatever in place of bake mix) per each tomato:

157 calories
10g fat
10 carbs
11g protein
3.5g fiber

I did not deduct for fiber for the 10 carb count so if you do would be 6.5

I love tomatoes and spinach .... just may have totry these today .... thanks for the recipe
