Tried this tonight. It was very good and definately worth the splurge and the time investment. Some notes:

1) Crab (without the shells) is commonly sold in 8 oz, containers, I used the whole thing.

2) I used 21/25 count shrimp. Using the 8 oz of crab, the reciepe stuffed 12 shrimp.

3) 4 shrimp filled me up, my wife ate all 6 on her plate (she is LCing also).

4) I used bacon from the local smokehouse, they slice it thick, so 3 slices worked out fine. I would not recommend grocery store bacon.

5) next time, I would add a few drops of hot sauce to the stuffing mix.

6) Did not have fresh thyme so a I subsituted some ground thyme.

7) I served the shimp with steamed asparagus with butter, a nice salad and diet root beer - Chard would have been better.

Im glad you enjoyed it. I always use hot sauce, but didnt want to include that in the recipe because not everyone enjoys it. I use Portuguese pira pira sauce very hot and delicious.
