Instead of tomato paste you can use Salsa. It's lower carb than the paste and it's really good. I always put it in my meatloaf.

I make 'the chef's favourite meatloaf' from the www.carb-lite.au.com site.....it's great.
I also sub the ground beef/pork with ground chicken/veal, add some chicken spices and it's even better.

Default Stuffed Meatloaf

I came up with this recipe by just fooling around in the kitchen.


1 pound of hamburger
1 Egg
1 Cup of crushed pork rinds
1 Cup of grated parm cheese ( i use the kind in the can)
1 cup of veggies ( I use peppers, oinions and Celery)
Salt and pepper
and I use garlic pepper
4 slices of ham
2 slices of cheese
4 slices of bacon

Mix all indgredients except ham and cheese and bacon put half into meatloaf pan. take cheese and layer it across meatloaf.

add ham on top of that and then cheese again.

add rest of meatloaf mixture to meatloaf pan.

sprinkle more parm cheese on top and add the bacon across the top.

cook for about 45 min on 400 degress.

I made this last night. It was the best meatloaf I've ever had. I put heavy cream in for the milk and topped it with atkins barbecue sauce. Its very hearty and heavy so I felt stuffed on a small serving. For me it will make about 10 servings. I will be making this all the time- its easier to make than a hamburger and it tastes better.

I plugged the numbers into fitday

For the whole meatloaf: 6 net carbs

When I added the atkins BBQ sauce per serving for 10 servings:
201 calories, 67% fat, 1.1 carbs

Here's one we make pretty regularly. I think next time i'll try it with some added ground pork tho, that would be yummy! For variety at times, i'll add a bit of chopped onion, mushrooms or any veggie that calls me at the time. Always works great!!

Mozzarella Meatloaf

3 eggs, slightly beaten
1/2 cup spicy V-8 juice or tomato sauce (i buy the lowest carb i can find)
1/2 tsp. ground oregano
1/2 tsp. salt
1/4 tsp. freshly cracked pepper
1/2 tsp. garlic salt
2 pounds lean ground beef
8 oz. thinly sliced mozzarella cheese, diced (save 2 slices for the topping)
2 tbsp tomato sauce or low carb ketchup
3 tbsp. Parmesan cheese, divided

Preheat oven to 350 degrees. Combine all ingredients except cheeses and 2 tbsp tomato sauce. Divide meat mixture in half. Shape half of the meat into a flattened oval in the bottom of a 9 x 13 inch glass dish. Top with diced cheese; spread to within 1 inch of the edge. Sprinkle with 2 tbsp. of Parmesan cheese. Top with remaining meat mixture; seal edge by pressing together. Spread top of meat with tomato sauce/ketchup; sprinkle lightly with additional garlic salt, pepper, and salt. Bake 1 hour. Top with sliced cheese, sprinkle with remaining Parmesan cheese, and return to oven until cheese melts. Allow to sit 5 - 10 minutes before slicing.

Smile Easy MeatLoaf... (no crackers or bread)

My accident meatloaf,not sure if this recipie is already on here or not but here goes.Tasted Just like meatloaf and was just as firm to me anyways lol
Use however many ingrediants u want to add or to decrease your carb intake(except the eggs).

1 lb or however much hamburger you want
2 Eggs
Spices--I used chili powder and garlic powder 0 carbs
Shredded Cheese
I also added a few jalepenos to my burger

Fry burger and add spices cook until browned,drain burger making sure to leave some liquid grease or water so it doesnt dry out while cooking.

mix eggs in a bowl (I actually added cream cheese to my eggs(a tbls) because I was just trying to make some kind of concoktion lol) not sure if u want to or not..

Spread hamburger in a baking dish or pan it should be about an inch thick layer of burger... no thicker.

Pour Egg mixture over burger evenly(If it doesnt cover all the meat add another egg)
Cover with shredded cheese

Bake until firm and cheese is melted ~ 300-350
Great for leftovers ..I ate mine with chopped cold jalepenos

5 oz onions cut up - 5 oz green peppers cut up - 5 0z of celery cut up- you can saute if you like. i did not do this. i cut thesse up and i added 3 eggs to it and i added about 3/4 cup kraft parmesain cheese to it as WELL AS ONE SMALL PACKAGE OF GOOD SEASONINGS SALAD DRESSING TO THE MIX. MIX WELL AND ADD 3 LBS OF GROUND BEEF . AFTER IT IS MIXED WELL I ADDED ONE CAN OF RED GOLD TOMATOE SAUCE AND PUT PART CAN IN THE MIXTURE OF MEAT AND THEN AFTER I FORMED MY MEAT LOAF IN PAN I ADDED THE REST ON TOP. I HAVE ASLO FROM TIME TO TIME ADDED THE LOW CARB CATSUP ON TOP OF MEAT THEN I BAKE IN OVEN AT 350 FOR ABOUT ONE TO A HALF HOURS. I LOVE THIS RECIPE. YUMMY. LET ME KNOW IF YOU TRY THIS AND HOW YOU LIKE IT. the next time i try this i am going to put some extra parmesain cheese that is freshly grated. sue

i forgot TO TELL YOU TO PUT 1/4 CUP WHIPPING CREAM IN THE GROUND BEEF MIXTURE BEFORE BAKING. MIX IT REALLY GOOD. I ADD ED ALITTLE MORE GRATED PARMESAIN CHEESE TO KEEP IT TOGETHER. SUE
