Mushroom/Spinach Stuffed Mushrooms

I ate these in a restaurant and just had to try and duplicate! Wonderful!!! Can even be substituted for a meal!

Mushroom/Spinach Stuffed Mushrooms

18-20 LARGE Mushroom Caps
1 pound hot sausage
1 pkg frozen spinach, thawed and drained
mozzarella cheese
Parmesean cheese

Saute' sausage and drain. Add spinach and blend well. Use this mixture to stuff mushroom caps. Top with mozzarella cheese and Parmesean cheese. Broil until cheese melts. Scrumptous!!! (Leftover sausage/spinach mixture can be frozen!)

You may even want to try Monterey Jack or Pepper Jack cheese for a change! We love it both ways!
