Default Missing carrot cake

Does anyone have a recipe for low carb muffins that would be similar to carrot cake? I have a low carb cream cheese frosting recipe that I would love to put on something. Or maybe something made with pumpkin?

Holy cow...did you check out their other products? I'm drooling over the Ultimate Chocolate Caramel Fudge Supreme Roll. Wonder if this stuff is as good as it looks, and if it's really as low-carb as they say...anyone know?

I didn't order from them. I bought it in a local store. It was ok - certainly not the best 'carrot cake'. I'm not sure I'd splurge $8 on it again but on the other hand you know, I get so tired of cooking that I'd sacrifice a little flavor for the convenience. All the chocolate ones were sold out, so I got this flavor. I guess that's a good sign. Maybe you can contact the webstore to see if any store near you sells it. I'll probably try the chocolate ones when I get back to the store.
The carrot cake part is ok, but what's really lacking is the frosting, which I don't think anything will replace the original. I loved that stuff. Didn't need the cake part..


Here's the info off the box:

for a 2.7 oz slice (that's pretty big IMO)
cal 47
fat 0
carb 4
fiber 2

the hidden carb counter puts the carbs at more like 6, but that's ok for me; it's still pretty low.

it uses splenda
and the filling is cream cheese
just slice and serve

Dana Carpenter's book "%00 Low-Carb Recipes" has a carrot cake with cream cheese icing, and if I remember carrot cake muffins. I think she uses zucchini in it for texture, can't remember off top of head.

Thanks so much for the information!! I remember reading somewhere about using zucchini. Hmmm. Maybe I need to look for muffin recipes with that in it.
