Default Easy, Zesty Stuffed Peppers (Induction Friendly!)

Y-u-u-u-u-m!

2 red bell peppers - I used Sheppard peppers, they roast really nicely
2 hot Italian sausages, removed from casings
1 Tbsp chopped onion
2 Tbsp dry grated parmesan cheese

- Rinse peppers, cut off top and remove seeds/membranes
- Combine remaining ingredients
- Stuff sausage mixture into peppers
- Wrap each pepper in foil, bake at 350F for one hour

Delish served with a bit of tomato sauce.

Without sauce: 9 g carbs - 3 g fiber = 6 'countable' carbs

Hey Hun... i've made this twice now..i just forget to post the reviews... they were fabulous... i top them w/ lc tomatoe sauce and mozzerella cheese.... i also add more onions.. but that's a personal preference...
