Default Strawberry syrup (easy recipe)

I really didn't want to have the Atkins syrup again on my pancakes. I searched for strawberry syrup and couldn't find anything. So, I made up my own and it tastes yummy.. Here's what you need...
  • 2 medium strawberries(I'm sure it doesn't matter)
  • 1 Tbs butter(I guesstimated both times)
  • 1 packet of splenda
Just mash the strawberries ,add butter and splenda . mix together and microwave 1/2 minute or so. Put on top of pancakes.
I am sure it could be made even better, but it was delicious as it is. and 100% better than Atkins syrup... Cindy

Default great idea

Thought I'ld bring this back to the front of the list, I've tried blueberries ~10. It is definitely any easy way to get just the right amount of syrup.
Jo
P.S. I'm back

This gave me the idea that using the microwave bread, with cinnamon and blueberries added, and then stick-blendering up a few blueberries with tiny amounts each of ricotta, cream cheese, sour cream, and butter, and sweetener to taste, would probably a provide a thick sweet creamy topping for that kind of dense bread. Good thinking on coming up with that LC strawberry! I always love the fruity syrups, and aside from the sugar this is 'real' fruit syrup!

Doing this and adding a little citrus zest and or juice works good to add a bit of "tang" along with the berry taste.
