Talking Best Chops I have had in a long time..Cheese n Chili Chops

Tonight I made a recipe I found on the Atkins web site! This is a keeper my family ate every bit of it. I served it w/ rice for them and I had a nice green salad. YUMMMM.

Cheese n Chili Chops

recipe is a quick meal

A sure-fire winner with kids. Read nutrition labels before you buy salsa: carb grams per serving vary greatly.

ingredients
1 teaspoon vegetable oil
salt and pepper
4 boneless center-cut pork chops (about 1 pound)
1/4 cup tomato salsa
1/2 can (4.5 ounces) diced green chilies, drained
1 teaspoon cumin
1/3 cup grated Cheddar cheese
2 tablespoons cream cheese

directions
1. Heat oil in a nonstick skillet over medium-high heat. Season chops with salt and pepper. Brown chops about 2 minutes per side.
2. Combine salsa, chilies and cumin in a bowl. Pour mixture over chops. Reduce heat to low, cover skillet and simmer chops 5 minutes or until cooked through. Mix cheeses in a bowl.
3. Divide cheese mixture over chops, cover and cook 1 minute, just until cheese melts.

I have seen more then 150 people look at this but not try it.....

So what did you think?

My family likes this so much I am going to make this again tonight but w/chicken!

I made this months ago and forgot about it until I saw it in my fitday journal. I was looking for it here (forgot I got it from Atkin's) and found this thread!

I can tell you these things are AWESOME!!!! My non LC housemates love them too! I will be making them again this weekend YuMMY

That recipe sounds really good. However, I usually do cooking for both me and my fiance'. He doesn't like pork chops, but do you think it would be good with lamb chops too

I made these on Wednesday night and they were bloody fantastic. I made my own salsa since I got frustrated trying to find stuff without sugar and they absolutely rocked!
