Default Atkins bake mix chicken fingers

This is something I threw together to replace my other refined flour recipe, of course you can adjust the portions

3-4 pounds of chicken breast cut into strips
1/2 cup cream
1/2 cup of water
one teaspoon cider vinegar
1 to 1 1/2 cups Atkins bake mix
heaping teaspoon baking powder
chilli powder or paprika, salt, (I use a couple of teaspoons of each give or take) and pepper (maybe a 1/2 teaspoon to a teaspoon) or you can season to taste.

Mix cream water and vinegar together, and soak chicken pieces in this for about half an hour.
Mix bake mix, baking powder and seasonings together well.
Coat chicken pieces with bake mix mixture, shake off excess, and let sit on wax paper for 15 minutes. I then cook the pieces in a deep fryer.
Not sure about the carb count because you will probably have leftover mix, and you throw the cream soak away. My kids and husband love them!
