Default Alergic to nuts!

Hi Karen,
I have been looking at all of the yummy recipies in your book, but I am allergic to nuts so the almond flour is not a possibility for me. Can you suggest an alternative that would work?

I'm thinking, perhaps vital gluten or soy flour (even the defatted kind, which seems to be a little less bitter). Even one of the LC bake mixes out there may help as a substitute.

Can't say I've tried them, so you'd be at your own discretion and experimentation. Don't know if the natural oils/fats in the almonds add to the recipe as a whole; in which case you may have to add a little more of whatever is used as fat in the recipe.

All nuts are a problem for you?
You might substitute golden flax seed, ground (if you're looking for a lighter colour), or regular flax seed, ground, if the colour doesn't matter.

I'd be interested in solutions to this, as well, just for the versitility and options.

Ground hemp seeds are a decent substitute for some things that almond meal is used.

I was going to suggest what Luke already suggested and also trying a mixture of ground sunflower seeds and sesame seeds. The taste and colour won't be the same - almonds are pretty neutral - but it should work.

Nuts and certain seeds aren't very absorbent. They supply bulk and texture to baked goods. So something that doesn't absorb liquid very well would work.

Thanks for the suggestions. I just bought Hemp shells, I have flax seed and sesame and sunflower on hand! I just baked a pumpkin cheesecake which didn't require a crust. When I get ambitious, I'll let you know how the next project turns out!

Don't use flax meal, it absorbs too much liquid. Stick with the hemp, sunflower and sesame.
