YUMMI I saw LC recipe with chicken (cut to small pieces) rolled in eggs with spice, and then dipped in (blended) pork rinds, and fried in vegetable oil. THought it sounded odd and disgusting, but I wanted to try it, just for fun...
And OH MY GOD..., it tastes sooooo good. Almost like chicken nuggets. I sat and ate it, and thought that I can't believe this is a diet/lifechange or what ever we call it.

If you're into McD chicken nuggets or KFC, you oughta try this, almost like the real thing.

I've made chicken strips like this before. I just dip chicken in egg, then in a mixture of italian seasonings,parmesean, and crushed pork rinds then bake or fry them.

Very easy and good when you're craving something with breading.

(also made fried cheese sticks this way- used string cheese, dipped in egg and then the same pork rind mixture)

Wow, you know if we can do this with a chunk of cheddar ( like hot dog on a stick does it )
with the faux bread crumbs it would taste like a grilled cheese sandwhich I bet.

Omg, just think of that being dipped into Atkins ketch-a-tomato

Off to get some eggs & pork fat! lol
