Default Yum, new breakfast, lunch, snack idea.

We had some peppers we needed to use up fast.

So Iggy cut em in half, put some bacon slices on them, covered them with swiss cheese and stuck em in the oven just until the cheese melted with the oven at 400 deg.

They are AWESOME and how more easy could it be? You could nuke em instead. I'm thinking that for breakfast you could put some scrambled eggs inside the pepper before you put bacon and cheese on, new variation of stuffed peppers.

We make a variation of those as appetizers here in south Texas! De-seed peppers and stuff with cream cheese, wrap in bacon and secure with toothpicks, grill or bake till bacon is done. They call them armadillo eggs here..lol..
