Default Use of alcohol in cooking

Hi Karen,

How do we dothe carbcount when we use alcohol ( wine, vermouth, brandy) in cooking? Do we have to add the full amount? I do not think so as the alcohol evaporate when during cooking right?

Count them the same as before the alcohol evaporated. The carbs are not in the alcohol, they're in what's left behind.

Brandy, btw, is zero carbs. Dry vermouth is very low carb as well.
