Judy - normally I don't eat that much sausage in one day so you are probably right, I am consuming way too much sodium. I think combined I consumed 1346mg of sodium just in the sausages alone.

I don't ever eat veggies for breakfast though I would be keen on the idea, just have to train myself to get use to doing so. Normally I have 2 hard boiled eggs and 16 ounces of water. I will forgo the turkey sausage links from now on.

As for protein, most of that comes from the meats I eat for dinner and lunch. While on Atkin's I ate bacon, country style ribs, rib eye, wings, ground beef and chicken thighs. Switching to South Beach my meats will be mostly chicken breast, shrimp, salmon, fresh tuna, turkey bacon, ground turkey and pork tenderloin.

One of the reasons I switched was because I do love veggies, but again I normally only consume 3 to 4 cups per day.

Besides the sodium, I think my biggest challenge will be to rid myself of the fear of how many veggies I am consuming in a single day. That is a huge mindset change from Atkins. The lean meat part is easy.

Ahhh, good then!

As for your veggies at breakfast....v8 juice is an option. I'd sometimes eat some tuna/ egg salad combo for breakfast and have some sliced tomato and cucumber with that.
We all need to start to think outside of the traditional breakfast box to learn to eat a new way.
