Default Has Anyone made nice LC bread?

My girlfriend and I tried to make LC bread from the GNC bakemix, following the Atkins instructions for normal bread.

We got a slightly yellow brown crumbly ugly-tasting lump.

Anyone got any good ideas for making nicer bread? Using either the fake bake-mix or the pre-made ones?

We both loved sourdoughs and wholemeal or rye breads, so we don't mind a heavier bread and definitely don't need a sweet white or anything, but by lass really does need more variety in her life - and really misses bread!

Never made any decent bread using mixes (Atkins or Carbolite). I made some that was rather bland (not appetizing enough to be worth the carbs) using Soy Flour, Whole Wheat Flour, Vital Wheat Gluten, and Wheat Germ. I tried to make Chocolate Doughnuts tonight, but after I fried them in Lard they were burnt on the outside...The inside has a nice texture...Haven't tasted them yet, though.

hmmm bummer. I've made some nice low-carb muffins, very fibre-y, but hey, that's not exactly a bad thing!

We've tried a few of the low-carb bread mixes in our Oster breadmaker. Sadly, none of the "heartier" (Sourdough, Rye, etc.) were edible...even the ducks in our back yard turned it down! But then we tried the Atkins Country White Mix, and it's not that bad!

At 3 carbs/slice, it's surprisingly easy on the carb-budget, too. We've found it's best to set the machine for the longest cycle before going to bed, then leave it in the machine until the next morning (it tends to "mush down" when you slice it, otherwise). Many folks prefer to freeze their bread a bit to get nice even slices, but I think that takes all of the freshness out of it. I picked up a combination bread box/slicing guide made of plastic for under $10, and we've got our bread problem pretty-much solved.

Sure do wish the Sourdough had worked out, though....

Hi

I've tried all kinds of low carb bread mixes and have decided to leave the bread making to the professionals. Most of the mixes I had to throw out. I currently go to Walmart and get a loaf of Healthy Life Wheat Bread (5 carbs per slice) and it is good...tastes like bread.
