Add another vote for the "more veggies than I ate before" camp. My whole family is eating better because of my low carbing.

As for the "butter and red meat will give you cancer and heart disease", the links in scientific studies are weak at best and all of the studies that pointed the finger at fat as causative of heart disease were based on diets that were also high in carbs. Grains are more often linked to colon and digestive problems (do a search on "leaky gut syndrome" for more information there) than red meat and fat. I'm not sure if you're aware of this, but law requires that livestock stop receiving hormone treatments at least 2 weeks prior to slaughter so that only very small amounts (if any) are still present in the meat.
Of course, if the thought of saturated fat and red meat bothers you, it's quite possible to low carb using less of those things and instead using olive oil and leaner cuts of meat. There is no law (last time I checked anyway) that says you have to eat a pound of bacon and at least that much red meat every day along with a dozen eggs fried in bacon grease to be considered a serious low carber.
