Thumbs up A Great sandwich bread!!!

Low Carb Sandwich Loaf

INGREDIENTS

2 3/4 cup gluten free low carb baking mix 1
1/2 cup heavy cream
1/2 cup water
1/2 cup coconut oil, melted
2 tsp cider vinegar
6 eggs, well beaten
1 tsp sea salt
2 tsp baking soda

DIRECTIONS

Preheat oven to 350 degrees.
Line a medium size loaf pan with parchment paper. Lightly grease the ends.
Combine all ingredients in a large bowl. Mix well so there are no lumps.
Spread into loaf pan.
Bake for 1 hour.
Allow to cool before removing from pan.
Store in the fridge for several days in a sealed container.
Also, I like to pre-slice the loaf, then place waxed paper between the slices and freeze. The wax paper prevents the slices from sticking together. You can just take out the slices you need without thawing the entire loaf.

This bread is low carb and tastes great! Doesn’t crumble at all. Toasts nicely too.
170 calories per slice. 4.6 grams of carb 2.3 grams of fibre

Fitartist, what is the purpose of the psyllium powder in your bake mix? I don't have any. Thanks.

Hi! The psyllium husk powder can be used instead of xanthan gum. In fact it works better. It keeps the loaf from crumbling apart, and the added benefit is added fibre. So total carbs per slice are 4.6 but net carbs are only 2.3.
You can get it fairly cheap at the drug or health food store. I paid $8.00 for my bottle. Xanthan gum could also work; try only 1/4 - 1/2 tsp for the recipe, although i can't guarantee the results since I haven't tried it that way.

Any advice on which Low carb baking mix/gluten free is the best out there? Thank you. Looking forward to experiment with this recipe. No need to answer I went on your blog page.. I love it and it's recipes.

For this recipe I used this mix that I make myself. I don't trust store bought low carb mixes.

Thank you so much following up on this. I haven't had a chance to go and get the soy flour and the husk powder yet due to the fact that we're short of a car until end of week. I am looking forward to baking this bread and is a nice idea to make the low carb mix ahead of time for multi uses, especially when you are short on time. Have a nice Holidays Season.
