Hi, Scruff! How've you been? I have the pumpkin bake recipe somewhere, too, and used to make it rather frequently. If you search this thread (maybe it's even shown in my first post), there's a variation for pumpkin cheesecake. A friend of mine at work just made it and it was a big hit with family.

I should have posted this before, but I recently wanted to make my cheesecake but forgot to buy the sour cream. I had unsweetened full-fat Greek yogurt in the house, though, so I thought What the heck!

That was the BEST cheesecake I've ever made!!! So much creamier than with the sour cream, and the top didn't split at all (though I don't know if this was because of the yogurt or just luck of the draw).

Even hubby raved about how creamy and good it was. He's always liked this cheesecake, but this time he said it was even better.

I've shared the idea of using the GY with several others, and those who have tried it agreed it's the best.

Hmmmm. Maybe I'll make one for this weekend. Thanks for the reminder!

Your cheesecake has been a favorite for years. I have one in the oven right now with an almond brownie crust (Dr. Davis Wheat Belly recipe) topped off with your cheesecake and about 1/3 of it swirled with some chocolate cheesecake mix of course.

Everything tasted delicious as I made it. (Yeah, I'm a beater licker. ). I am bringing it to my moms for dessert tomorrow night. After I know how it turns out I will post the recipe in another thread and edit this post to put a link to it.

Sounds like a winner! I'm so glad you enjoy it and are passing it along. Be sure to include the recipe for the almond brownie crust. I've never found a crust that I've liked, so I always did without.

Hmmmm. I think I might make a cheesecake this weekend!

It's based on a regular recipe that I got from a friend years ago, and I've made it LC.

You can mix this up in a blender (though it has to be a powerful one) or a food processor or even just a bowl with a mixer (as I do).

2 eggs

Bake in a preheated 325-degree oven for 35 to 40 minutes. It won't look quite done, but it does firm up as it cools and has been in the fridge. To help keep the top from cracking, I place a pie tin filled with water on the shelf below to keep the heat moist.

Even DH didn't know it was LC. He loved it!

Also, sometimes I'll keep out a cup of the batter and add some unsweetened cocoa to taste (1 Tbsp has 2 carbs with 2 grams fiber, so 0 ECC), and then dollop it in and swirl it around.

Other people have added pumpkin and other flavorings.

It also freezes well. Same texture and flavor after defrosting.

I made this a couple weeks ago and kept out about a cup of the batter, mixed that with some sugar-free strawberry jam, and then spread that over the top so there was a thin layer of the strawberry flavor. Topped with real whipped cream, it was heavenly.

Next time I'm going to do the same thing with sugar-free orange marmalade. Doesn't that sound refreshing?

I do have one question though can i use the stevia or the one I can't spell which is eryth something!!!
Would the amounts change?

Looking forward to trying this today! I am back on the LC train after a few years off doing Weight Watchers. LC is much better and easier for me. Anyway, do you think the greek yogurt changes the net carbs? I just got my liquid sweetener and bought FAGE yogurt yesterday, so excited to make this!

Gilly, sorry I didn't respond, but I didn't get a notification of a new post. You can use any sweetener you want. Just be sure to start with less than the stated amount and then add more until you get to the desired sweetness.

Yes, I'm sure it changes the carb counts. Just throw all the ingredients into FitDay or one of the other online meal planners to get the correct counts for the yogurt you're using.

Here is the nutrition for use with greek yogurt and the crust, not bad!

(thanks for the tip on the online nutrition calculators, forgot about those)


Add Ingredient
Total: 2,567 28 240 83 2,069 16
Per Serving: 214 2 20 7 172 1

That is 2 net carbs per serving, based on 12 servings per recipe and using liquid splenda.
