Karen, where do you get those unsweetened chocolates you mentioned at the preface of this article? I always use the Baker's chocolate but really dislike using it. I'm with you, since I eat it so seldom, I'd like to make sure it's good.

Try calling around to some "gourmet" food stores. I think Sen5es may carry some of the brands.

Bakers chocolate is sooo grainy when there's not all that sugar to cover up the texture.
