Hi all,
Not sure on where to post this question. Has anyone else purchased the Vital Wheat Gluten Flour (Bob's Red Mill) from Netrition in the last week or few days? Anyway this is what I got a bag that says in the Label" Vital Wheat Gluten 75% to 80% Protein". I was under the impression that they're 2 different things, to be used in different way, one as a flour and the other is to add elasticity to the dough and to be used in small amounts and not as a flour replacement. This is the answer I've got from Netrition today

The Bob's Red Mill Vital Wheat Gluten that you received is the Wheat Gluten Flour. Unfortunately, we have not updated the picture on our website yet. I will make sure that is done today. The only difference, is that Bob's Red Mill is now advertizing that the product has 75-80% protein. If you have any further questions or concerns, please feel free to respond to this email.

As far as I know, vital wheat gluten is always just (mostly) the gluten -- evil protein that is bad for everyone. It used to be used a lot in low carb baking, but once folks realized what it was doing to them, they got away from it.

It used to be, bakers would add more gluten to bread to make it more elastic, but low-carbers realizing it is almost 100% protein, started using it with other flours to make them rise better (almond meal, soy flour, lupin flour, etc).

IMHO don't buy it. Find other recipes that don't use wheat or oats. Your body will thank you and you will eventually lose the cravings for wheat.

BTW: Looking at the nutrition facts for the product, it looks like the 75-80% one is lower carb.
