Default Corned Beef crockpot stew

My husband and I are big fans of corned beef. He thinks my most recent development in the Irish Boiled Dinner is worth sharing:

-slab of corned beef, placed in crockpot, fat side up
-small head of purple cabbage, cored and quartered
-"baby" carrots to taste (I'm switching husband from potatoes to carrots, so I'm generous)
-1 pound package of Silver Floss sauerkraut poured over whole thing
-spice package from corned beef sprinkled over

And that's it! Crockpot it for 6 hours on high, 9-10 on low, and prepare yourself for the most tender corned beef.

Simply put, starchy veg will handle this much cooking; most low carb vegetables will not. So I just ditched the potatoes, ramped up the other ingredients, and came up with this variation.

My own serving is low on carrots, and has Thousand Island dressing as a dipping sauce. Yum yum!
