Default Making Atkins' simple...

Okay, my husband and I are on Day Three of the Atkins' "Induction Diet." So far, so good. We are following the menu plan in the book. Is it just me, or does this seem very labor intensive? And how does one handle packing a lunch...some of these recipes don't seem they'd hold very well for reheating at work. Any ideas? bjw

My lunches are pretty standard:

1 cup romaine lettuce with 1/2 tomato and some ranch dressing.
1 tin of tuna or salmon, with 3 tablespoons mayo
4 olives
hardboiled egg or slices of celery with cream cheese
slice of old cheddar cheese
a few pistachios or pumkin seeds, macadamia nuts are good too

(and I'll often have a piece of fruit too, but I'm on maintenance)

I understand what you're saying about perhaps more work. We've been so spoiled (so to speak), with fast food, or prepared food.

I guess I go back to the old say "Good food takes time to prepare". I think though because many of the choices may be new it seems more work.

Basically for induction I think it helps to keep it simple...meat and vegetables. Perhaps if you read through some of the journals in Bootcamp you'll find some menus that might be easier.
