Default Sauerkraut and beef soup

Inspired by a recipe from my childhood

Ground Beef and Sauerkraut Soup

1 lb. ground beef
2-3 tsp. olive oil
1 cup chopped onion
1 T minced garlic
14-16oz chicken broth
28 oz beef broth
14 oz. can diced tomatoes with juice
14 oz. can sauerkraut with juice
1 T Splenda
1.5 T Worcestershire sauce
4 bay leaves
3 T minced parsley or 1-2 T dried parsley
1 tsp. rubbed sage
fresh ground black pepper to taste
water if necessary if too thick for your taste

heat 1 tsp olive oil in a large heavy saucepan (I use a big cast iron one) over medium heat, add ground beef and brown. Break up the meat as you are browning. When browned, add the onions and garlic and saute until the onions are soft. Add the rest of the ingredients to the pan (except the water), scraping the browned bits off the bottom of the pan.

Lower the heat and simmer for an hour or so. Season with pepper and add water if you wish. Serve hot, with a dollop of full fat sour cream.

I have most of those ingredients, I will pick up the rest this afternoon and try this recipe tonight.
