Today I checked more label values at another supermarket, carbs values for olives, either black or green, ranged from 0.1% to 1%. One exception was the 3.8% from an olives plus herbs and other spices product.

I suspect the carb content depends mainly on what they put in the brine. Olives don't need any sugar, but some brands may include some in the flavourings.
