Default Crispy 'pork rind' coated chicken for dinner tonite!

It is cooking right now and should be ready in about 10 minutes. It smells wonderful and looks just like bread crumb coated chicken. I will let you know how it turns out!

I will have to try to find the bbq flavoured ones, I have never seen them. In fact it was quite something to even find the regular ones.

They were great! They were so good I ate 3 pieces! I cooked thighs instead of breasts (the recipe says breasts). My 16 year old ate it and didn't say a word and said he might have some more later. If he knew what they were coated with he would have a fit so I won't be telling him. The only thing I would do differently is to cook them at a bit lower temperature. If you like really crispy skin then the recipe is fine. I would lower it a bit.

Great first experiment with 'substitutes'!

I made fried chicken breaded with flour for my kids and fried chicken coated with bbq pork rinds for hubby and I. Our kids asked if they could try our chicken and believe it or not my kids prefer the fried chicken breaded with bbq pork rinds. So that is the only kind we have now. One of my daughters is 15 years old and you know how odd teenagers can be at times. lol

My wife who is on weight watchers couldn't resist them when I made them on Friday. They were so good I used the recipe to cook frog legs and they were awesome.

Yum, that sounds good! I have some hot and spicy ones that would make a good coating. Now I have to see what to thaw out that I can use them on!

jeanyyy - here is the recipe. I found it here. As I said, I didn't use breasts I used thighs and next time I would lower the temperature. This would just suit my personal preferences. Oh, and I didn't use the melted butter, I just sprayed the top of each peice with my olive oil Pam spray.


Crispy Baked Chicken

4 large chicken breasts, bone and skin intact, split in half
1/4 c heavy whipping cream
1/4 c water
1 - 3oz bag of pork rinds finely ground
1/2 c grated parmesan cheese
1 tsp italian seasoning
1/2 tsp garlic salt
3 - 4 Tbsp melted butter

Preheat over to 400 degrees.

Mix the cream and the water together. In a shallow bowl, plate or bag, mix the pork rinds, cheese, seasonings and salt. Dip the chicken in the cream mixture and then coat with the 'breading'. Place the chicken on a rack in a roasting pan (sprayed with non-stick spray). Drizzle the melted butter over the chicken. Bake 45-60 minutes.

Thanks, Jennifer.. Turns out I had it already (I've got so many recipes, I forget what I have!), but I hadn't tried it yet. It's nice to know when somebody has tried it and it turns out well
