Default Cauliflower (potato) Salad - Oh My!!

So, verrrry good!! Just like the potato salad I make for my husband. Just wonder how much I can eat!

Oh my!! Can you share your recipe?? I have never tried a cauliflower salad rather than a potato one.. I usually just mix mayo with yogurt and sometimes add mint.. I'm sure that it wouldn't be good with cauliflower, and the yoghurt is not appropriate for my stage of the diet.

I bet your recipe is far better. ????

This is a truly southern potato salad recipe. Onions, relish, celery,hard boiled eggs,mayo and a touch of mustard. Everything is the same for the cauliflower salad except I use SF relish and the cauliflower. It really tastes the same to me

whole head of cauliflower steamed and cut into bite sized pieces.
5-6 boiled eggs chopped
1/2 onion chopped
4T sweet relish
dash of sweet pickle juice
salt and pepper
dash of yellow mustard
mayo

mix together, chill and serve!

***** i also love chopped bacon in this!

Well - that's great! Thanks so much for the help and the recipe. I will try it. It's very different from the type of potato salad we eat in Europe, but I love to try foods from different places, and this will be my first Southern salad.

Kirsteen, I'm really excited for you to try a southern potato salad and report back! I used to hate potato salad when I was a kid until I had a southern potato salad and it's one thing that I really miss having on the diet. Yummmm. I loooove mayo but the yellow mustard really does it for me for potato salad.

Thanks very much, everyone. I do think the mustard would "make" this recipe, and my man is willing to try it (important as he does almost all the cooking, and eats the same as me.)

I introduced my kids (older "kids" - in their 50's!) to "fauxtatoe" salad, very similar to PJ's recipe, and they didn't even notice that it wasn't made with potatoes until I told them after they'd eaten most of it. Now, they always make it with cauliflower too. Never thought of adding bacon to it -- will definitely try that this summer!!

Sounds good. I guess I could use dill instead of sweet.
Sweet and me don't go together. I'm too sweet already.
If I want something to be sweet I just stick my finger in and stir.

We tried making this cauliflower salad yesterday and it was really great. I used 3 eggs and 4 rashers of bacon. I didn't want to use the sweet relish, so I substituted with red pepper, some cucumber, and a dash of stevia. It was really good, but next time, I won't put the stevia in. We aren't used to sweet flavours in salads etc.. and it was weird - like a dessert made with cauliflower, lol. Apart from that, it was definitely the best cauliflower dish I've tried on low-carb. A keeper! Thanks so much for sharing it.
