I worked a 12-hour shift starting at 3:30 am, so the kitchen is CLOSED. Fermé. Cerrado. We just ordered in Swiss Chalet.

Yikes Kristine! Ya, I wouldn't be in the kitchen either...

I am making Roasted Vegetable Lasagne (all day effort) and will get a piece before bed!! Finishing it now.

Movie sprite- glad you liked it. Your cheese cloices sound so good! Also, mmmmm, lasagna

Kristine- yikes! Hope you got some rest! What did you order? We definitely go for delivery some nights, so I'm always looking for good delivery ideas. We do a lot of Asian things- Chinese like egg drop soup, mooshu pork, chicken in brown sauce or Japanese (miso soup, sashimi....)......want to stop our once in a blue moon gluten free pizza nights. It might be GF, but it sure destroys my blood sugar, and I have ZERO self control once it is in front of me.

Last night the shrimp was nice, as usual. but I hit victory on zucchini with the DH. I made latkes using coconut flour and he really liked them, although he kept calling them "the omelet thing" (they kind of fell apart because I made them too big and flipped way too early and often. Aargh... Patience grasshopper).
Next up, will try a zucchini casserole type dish to entice him to the new veg

Tonight is paprik chicken over a bed of roasted garlic green beans and goddess dressing.
He has never had goddess dressing, but claims he doesn't like it, so fingers crossed again. He offers to cook every night, so it's not like he is infantile or demanding I cook, I just want him to branch out from the same things over and over. Variety is important for hitting vitamins/minerals and I find it daunting/frustrating to have such a limited menu.
But hey, at least I have someone who is always willing to cook and help do things like thaw the shrimp :

Robin, we usually order their family pack, which is a whole rotisserie chicken + sides. He wanted a stir-fry, though, so I just got a chicken breast dinner with their veggie mix (broccoli, cauli, and shredded carrots.) I like the family pack because it's good for two or three meals + the carcass for bone broth. Pretty good value, as far as restaurant delivery goes.

Tonight, I'm making cream of broccoli soup. I think I might try throwing pork rinds in mine. (Is that Wearbear's trick? Trying to remember who suggests that...)

Entree is garlic wine mussels.
Green side salad to round it out.

Still having my Roasted Vegetable Lasagne - so good!!! My body doesn't like the ricotta, blows me up a little. I'll try cottage cheese next time.

Oops. Well, I do recommend it! I wouldn't describe them as noodle-like, more like a few crushed crackers. Plus, it's an easy way to get some protein in an otherwise low-protein soup. Tonight's dinner was just that leftover cream of broccoli soup with a few pork rinds thrown in.

I had leftover roasted eggplant and zucchini pieces, leftover tomato paste and mozzarella, so I just made a sauce and put it over the veggies with cheese. That will be tonights dinner too - the last of all of that.
