This really sounds good. I make my own Italian sausage, but have never tried a regular breakfast sausage. I'm even growing some fresh sage I'd like to try in this. Thanks!

kellyzkids, can you compare the taste of this to anything else for me? Like, how differently does it taste from standard (say, Jimmy Dean HOT) spicy breakfast sausage?
Not the OP, but I can tell you this won't be like typical breakfast sausage. More like Italian with the fennel, garlic and parsley. I didn't notice the garlic in it on first reading.
It is a cross between italian and spicy jimmy dean. It has no grissle which is great ! The sage gives it more traditional breakfast flavor but the fennel adds a bit of italian flair. I love parsley for color, fiber and nutrients !
I will be making this tomorrow! I just bought ground pork because I was going to make meatballs, but then I decided (since I'd just been to Penzey's) that it was time to expand my repertoire!
