Default Psyllium Husk Pancakes! Wow....

I've tried all of the recipes for pancakes and waffles...they are all just "OK" but the texture has always been a little "off."

Well, I found a great recipe that tasted and had the texture of pancakes!

I got it from Youtube, from a bodybuilders' channel.

Here is the recipe I used:

6 eggs
1.5 scoops Whey protein powder Vanilla flavored. (3 net carbs)
2 TBSP Psyllium husks (no carbs)
1 TBSP Cinnamon (.5 carbs)
1 TBSP Splenda (or 4 drops EZ Sweetz) (3 carbs or 0 carbs)

Mix the eggs in a blender, let blend for a few minutes to whip…then put in the other ingredients.

Keep the mixture stirred! It will separate some while sitting…so before you spoon some into the pan, stir it to keep the consistency the same from pancake to pancake.

Total carbs for the whole batch was 5.5 and it made 8 pancakes. What you see in the picture is ½ of the batch or 4 pancakes. (they are thin….the batter was thin) Also, these tasted great the next day so I think that freezing them would also work.

Jam,
You can make them without the protein powder...that's actually the real recipe from the video...just eggs, psyllium husk, cinnamon, splenda.

I made a half a batch of these for breakfast. I left out the splenda though. I thought they were great and really fluffy! I ate all 3 pancakes and now wish I hadn't. VERY filling!!!

I was thinking the batter could be thinned a bit more add savory spices and it would make a great base for a sandwich!!

to make a brioche "bread" type thing add in some lemon zest and juice. Eat with butter- YUM!

I do have a question though about the psyillium husks, are they the whole husks or the powder? The texture of each is very different.

I just had these for breakfast and they were amazing. Other than a slight eggy taste to start with I couldn't tell they were not real pancakes. I added a little baking powder and ate them with butter and low carb maple syrup. Yum!

i tried this with 1 egg and 1 teaspoon of husk the other day, it was tasteless, but the texture really amazed me
1 of it is really really filling
and the next day, whoooooosh (pardon me i have been having constipation for years)

i made 1 again this morning, with 1 teaspoon of protein powder.
tasted so much better

i am going to try to make tuna sandwich with this

Default Are these pancakes Atkins induction friendly?

Hi I am new first week of Atkins induction and wondering if the pancakes are okay for induction? I am not sure with these ingredients even though carb count is 5.5 carbs. thanks so much!! I Love Pancakes!!!!!
