Default Sweet fruti omelet

Okay, I make several versions of this, and the possibilities for experimentation are seemingly endless. Here are my two favorite takes on this:

First, make some sweet-cinnamon nuts , with the apple bits, or 2-3 cut up strawberries.
Now, make a 3-egg omelet*. and use the nuts as the filling
If you use apples, add cream cheese, if you have it.
Before you fold over your omelet, add some more cinnamon (how much depends on your personal tastes).
That's it!
The filling comes out to something like 6g net carbs, and they are low gi, complex carbs. It may sound weird, but it is tasty! Of course, I might just be weird....

*tip: If you add 1 tsp of coconut cream per egg, then beat the eggs, you will get much fluffier, creamier, tastier eggs.

Not weird at all. I've been making fruit filled egg-crepes for a long time. Just eggs and water to make the crepe. http://mostlypaleo.blogspot.com/search?q=crepes
