I'm still tweaking this recipe. I wanted something that was easy to make in the morning - ie - something I could mix together and toss in microwave while I'm making my lunch or ice tea. I'll post my tweaks as I go. The start for this recipe was a flaxseed muffin recipe
Spinach, Cheese and Egg Dish
1 oz butter
2 tbsp whole flaxseed
1 tbsp chia seeds (optional)
Handful Spinach
4 eggs (I use XL)
1 oz shredded cheese
Spices (your choice)
Place butter in bowl that you are going to cook this dish in. Microwave until melted. Rinse the spinach in water and shake excess water off leaves, but leave some on. Put spinach in with butter and microwave about 30 secs until spinach is wilted and partially cooked.
Grind the flaxseed in a coffee grinder (you can use the bagged flaxseed meal but the freshly ground makes such a difference!).
Break eggs into a separate bowl and mix well. Add ground flaxseed and chia seeds to eggs and mix well.
Pour the egg mixture into the spinach and butter bowl. Mix will. Add cheese and mix well. Add spices to your taste. I tried some lemon pepper mix and italian seasoning.
Microwave until set/done. My microwave took 4 mins on high.
Notes:
You could probably use any vegetable you want. I haven't tried others but you should slightly cook them.
Chia seeds are a good source of Omega 3 like flaxseeds. The seeds need to be soaked and get gelatinous/gel like. I haven't tried the recipe without the chia seeds. I'll do that for lunch today and see what the consistency is. I purchase from: https://www.chiaseedandoil.com/chiacart/
Made this the other day and it is a good basic recipe. Definately requires some bacon for me but a good way to use up fresh spinach that has started wilting.

I made something very similar to this today making scrambled eggs. I used spinach, onion, three eggs, three tablespoons of whipping cream and one ounce of cheese. Very tasty!
