Default Rhubarb Fool

Hi; this is my first post, though I've been lurking, and learning, for several weeks now.

Today I harvested the last of the rhubarb, and decided to make this traditional English dessert. I don't have much of a sweet tooth, but I do like rhubarb. This is often made with berries, gooseberries being common. My father loved gooseberry fool, though he didn't get it often as gooseberries are not easily found in California

There are really only 3 ingredients:
Rhubarb, or other fruit
Whipped cream
Sweetener of choice

Cook the rhubarb or gooseberries in a tiny amount of water (to prevent scorching) just until somewhat soft - its nice to have a little bit of texture left.
Add sweetener of choice, but keep it on the tart side - I used a small amount of stevia powder. Put the fruit into the 'fridge to chill.
Whip cream to soft peaks - I don't sweeten the cream as the fruit is
already sweet, but I like to add a bit of vanilla extract
Swirl the fruit through the cream, and serve in pretty dishes.

No quantities given, as it depends totally on what you have and how you feel. More cream? Or more fruit? Up to you

This would also be really nice with fresh summer berries - blue-, rasp-, straw-, etc - in which case I would not cook them, just mash them a little, and save some pretty ones to decorate the top.

What great timing! I just ran into a neighbor while walking who is bringing me some rhubarb tomorrow. He's also offered me his rhubarb/strawberry crisp recipe, but I know I can't have that. This sounds like just what I need. Thanks.
