Default Yam Bean, Jicama, Yumbin

Have been searching the markets in Sydney like Flemmington for this low carb vegetable which has multiple uses. No luck. Then in Woden ACT I found it! Yum.... Peel and slice it, drench with lime juice and eat like an apple. Juicy, crunchy, crisp. Used it as a crudite for dips.
Now in Darwin and the markets here have them. Today I grated some, squeezed out the moisture and added S&P and herbs and fried them in coconut oil as Hash Browns for breakfast. They can be cut into chips and fried I believe as well. Used as water chestnut substitute.
Looks like a turnip but flatter and I believe they grow on vines along the ground.

My love affair with Yam Bean continues. Found it at all the veg markets in Darwin and when we got home in late November ordered seeds on-line from Qld. They are in the garden sprouting. It is a tuber that sends up vines, had a pod with seeds which are poisonous but it is the tuber that is eaten. I might live too far south for the growing time and sunlight hours needed but I am giving it a real good try.
