for the lemon.....I used a 12 muffin tin (no liners) put in freezer for 1/2 hour they pop right out....cut in half and voila. They are not "pretty" but very effective.

Some people use an ice tray as well

Those are both great alternatives! I'm definitely not concerned with aesthetics. I just had visions of trying to run a knife through a frozen block, unable to make equal portions. Your options sound so much better

I make mine in an 8"x 8" brownie pan lined with waxed paper. When solid I lift the paper out onto the cutting board and use my "big ass sharp knife" and cut into approx 1" squares. Of course I have to eat any broken ones so the squares will fit nicely into a plastic container, lol.
