i have a mildly wilted spinach salad recipe- i top the spinach base (wilted with garlic and a bit of sea salt) with shrimp cooked in buffalo wing sauce, then top salad with blue cheese crumbles. i love it!

but now i might have to experiment with wilted spinach and bacon dressing, and well, bacon!

I had one wilted spinach salad with really thin red onion and I can't remember what else but crumbled blue cheese is right up my alley for sure. We went through a small box of that on salads the last 10 days, and bacon too and one day I crumbled 3-4 pecans and walnuts would be good too...

I made a batch of what the originator called "Dreamy Creamy Spinach Soup". It is a rich, easy, low carb soup and I make it often. It has turned into a family favorite. It really hit the spot at lunch today on this cold and dreary day.

i finally tried chayote- it is awesome!
i stewed the slices with splenda, cinnamon and lemon juice. they take awhile! and really do taste very similar to baked apples.
i topped with sf maple serving when serving. yum!
super picky boyfriend who loves veggies, but only 5 different ones, also really liked them

Tonight I cooked my beloved roasted Zucchini Squash, Red Peppers, Mushrooms and Spring Onions.
I seasoned with garlic salt and pepper, placed in a single layer in the roasting pan, then doused it all with olive oil and roasted on high heat of 500 in the oven.
I turn veggies a couple of times, added some butter in several pads and turn over veggies again as the veggies roast and caramelize.

This is to die for and so easy. It really almost cooks itself

Cooking on high temp and in a single layer, assures that the veggies are going to roast and not turn to liquid

Last night I made crack slaw (cabbage) with canned crab for the first time ever. The Sriracha overpowered the crab, so we couldn't really taste it. Next time I'm going to try shrimp and see if it holds up better.

I've also really been digging steamed baby bok choy lately.

Next up I'll try the chayote talked about above.

Crack slaw is really good with crumbled ground pork or 0g carb bulk sausage and a little sesame oil and soy sauce. It tastes like an Asian dish.
One thing I have learned about making this is to hold back on adding any regular salt since the soy has a lot of salt in it. I have had to throw away a whole batch that was just way too salty.
Baby bok choy is really good and I just had some tonight.

Agreed. I've made crack slaw with ground beef, turkey and Italian sausage. The latter was the best, IMO.

I love all of the colorful veggies like Red and Green Bell peppers, Yellow Crookneck Squash, Zucchini squash.

One of my fav things is to chop in small pieces, red pepper, zucchini, 1 mushroom and spring onion stir-fried and then mixed with eggs.

Since I no longer eat oranges/juice, I like the Red peppers because of the high vitamin C.
