Default Lower Carb Pasta Alfredo

Alfredo sauce: 1 stick of butter, 8 oz. cream cheese, 3/4 cup shredded parmesan cheese, 1/2 cup milk, 1/2 t. garlic powder, salt & pepper to taste.
Cook over very low heat, stirring frequently. Consider using half and half or heavy cream for even lower carb count. I served over cooked Dreamfields linguine.

Sounds good. I usually have my Alfredo these days over zucchini "noodles". I rarely allow myself the Dreamfields, as I'm not sure I buy into the "protected carbs" notion they tout.

Just thought I'd post this link from Jimmy Moore's blog, I read this article a couple of days ago about Dreamfields pasta, and it doesn't seem that Dreamfields pasta is quite as low or lower carb as they say it is, since it appears to impact blood glucose almost identically to regular pasta.

I never bought into the Dreamfields schtick, I couldn't possibly see how 'resistant starch' would not break down in the gut the same as regular starch...

Has anyone here tried the Miracle Noodles? I've looked at them but really have been apprehensive to buy any since I can only seem to find them online and they're a bit expensive. But it would be nice to mix up some chicken alfredo with some sort of noodle.

I'm going to have to try this.
I've used either broccoli or julienne zuchini in place of spaghetti and both have been fantastic.

that is disappointing to hear about the Dreamfield's pasta, but the alfredo sauce with chicken and broccoli certainly sounds good. will have to try that soon.

here's another option for noodleish things: I keep forgetting to try it but I may give it a go for dinner tomorrow.

Celery Spaghetti

I think chicken or tuna alfredo on celery sphaghetti sounds pretty good.
