Lightbulb Boss Sauce

I just started a strict version of Atkins. So there is a lot of chicken involved but chicken is pretty dry and not super flavorful. I needed a sauce. I checked the atkins website and Mayonnaise, Mustard, and hot sauce are allowed. It made a great sauce that goes with everything. I hate egg whites but this sauce makes them bearable. Below are the proportions

1 part mustard
3 part mayo
As much hot sauce you can handle, I used habanero and it gave it a nice zing

Sounds like a good sauce!
I have to take issue with the dry/unflavorful chicken comment -- wait until you try this:

Chicken Thighs
a little oil for brushing mixed with a dash of salt, pepper, garlic and drizzle of soy sauce - brush on chicken thighs (skin on)

Bake at 350 for 1 hour to an hour and a quarter.

I'm not sure why, but when you bake them for a long time they get crispy and juicy and fall apart and taste like candy to me!

So ... what version of Atkins makes chicken dry and not flavorful? And why are you worried about egg whites? There are people on here who throw the egg whites away and just eat the yolks, which is completely compatible with Atkins. And chicken legs and thighs are pretty tasty, although the breasts are indeed dry and lacking in flavour. I shred the breasts to put in soup.

Are you combining an Atkins style diet with low fat? That is definitely NOT Atkins ... Atkins is a low carb, moderate protein, and high saturated fat diet. Sat. fat is finally being recognized as being healthy !!!!
