Default Spinach Frittata

Do you think I can substitute the milk for heavy cream or will it be too "gloppy"? I have a different recipe than this

Low Carb Recipe - Spinach Frittata


1/2 cup julienned sweet red pepper
1/2 cup chopped onion
2 tablespoon olive or vegetable oil
3 eggs
1/2 cup milk
1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
1/2 cup shredded mozarella cheese
1 tablespoon grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper

In a skillet, saute the red pepper and onion in oil until tender. In a bowl, beat eggs and milk. Stir in 1/2 cup spinach, mozzarella and Parmesan cheeses, salt, and pepper. (Save remaining spinach for another use.) Add to the skillet. Cover and cook over medium heat for 7-10 minutes or until completely set. Cut into wedges. Yield: 4 servings.

You can also add 1 cup chopped cooked chicken to the egg mixture, if desired.

I've made a very similar recipe many times, and heavy cream works fine. If you want you could use part water part cream though to make it more like milk.

Not sure of the temperature, but its quite warm, it sure is nice to be able to go outside and not have to wear a dozen layers.
