Default Stacie's Beef Enchiladas

8 low carb tortillas (ecc: 3-6, depending on brand)
2 lb hamburger (ecc: 0)
6-8 green onions, chopped (ecc: 1)
8 oz mexican blend shredded cheese (ecc: 16--could lower with different cheese)
20 oz can red enchilada sauce (ecc: 36)
10 oz can diced green chiles (ecc: 4)

2oz homemade taco seasoning. *Mix items below (ecc: 2)
2 T chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp crushed red pepper flakes
1/2 tsp dried oregano
1 tsp paprika
3 tsp ground cumin
2 tsp sea salt
2 tsp black pepper


Brown the hamburger. Drain off fat. Add the Taco seasoning mix and 3 1/3 cup water. Add the can of diced green chiles & green onions. Mix and simmer to burn off liquid - about 20 minutes. Set aside to cool.

Pour enchilada sauce to cover bottom of pan. Next, paint sauce on the inside of tortillas. Then add enough meat mixture to make them plump. Add shredded cheese on the meat, roll up & place them, seam side down, in the baking pan. Pour the enchilada sauce over all.

Bake at 350 degrees for 25 min, til bubbly. Sprinkle on remaining shredded cheese. Cook for 3 more min, or until cheese melted.

Top with Sour Cream.

Total Carbs (without sour cream): 62g
Each Serving (without sour cream): 7.75g

The hubs (a native Texan and self-proclaimed Mexican food snob) kept gushing about these (and he's so not a gusher)!!
