made this recipe last night without even knowing it was posted here! I always make egg crepes and use them for SO many things - as fajita wraps, lasagne noodles, dessert crepes, manicotti rolls, enchilada wraps, and even sometimes I stuff them with asparagus, ham and then pour over melted cheese. mmm. Low carb tortillas are great, but sometimes I just want something I can make from scratch!

I was just dreaming of a thick rich lasagne! I was kicking around using cabbage or bacon for the noodles. Never thought about egg. Will try!

I made a veggie lasagna last night using zucchini - roasted them first in the oven, flipped them and browned a layer of parmesan on top - it was delicious!
