Hi Dani
A search engine picked up your entry here. I was searching for this carb free flour.
I think it's called ros 95. Developed by an Italian. Available in the States now. I'd like to know more about it. If it contains soy I shall give it a miss.

Well its arrived ... I have been watching for it. Un fortunately for me there is still not enough information and of course no links up yet as to where or how I could procure it here in NZ

http://www.liteflour.com/about.htm

and there is this site ... it will need to be translated unless you are fluent in Italian

http://www.adieta.it/pane-rivalta.htm

and final edit ... again a site in Italian
Quote:
The secret is in the flour of Rivalta , technical name ROS 95, a rich mixture without sugars but of fibers and proteins vegetables, obtained from proteins of frumento, soia, bran of maize and frumento, and usable in order to prepare paste, bread, peaks and focacce, biscotti and cakes - these last ones, adding dolcificanti acalorici.
