Thumbs up Cauli "Potato" Salad

Warm weather rolled into Southern Ontario for a couple weeks so we had the BBQ going and all I could think about was Potato Salad. Quick fix, swap cauliflower for the potatoes. Make as usual, instead of Miracle Whip I used Mayo with a little Splenda I believe....however there are some great recipes for whipped salad dressing on this site I was in a hurry so it did the trick. OMG it was delicious....I just used frozen cauliflower (all I had) and let it defrost.
Sorry I don't have an nutritional information, but I figure it couldn't be all that bad as it was just a side salad (1/2 cup- 1 cup serving at the most) it was a nice treat and a great substitute to such a traditional BBQ salad. Enjoy!

After defrosting the cauliflower, did you just mix it with the mayo or did you boil/nuke it first?

Yeah I just mixed it all up, allow some time to drain any water out of the cauliflower before mixing. I was in such a hurry that was my only regret was that I didn't get more water out of the cauliflower. Perhaps steaming fresh cauliflower and allowing it to cool would yield better results (less water)

When I make a faux 'tater salad, I always cook the cauliflower first then chop into chunks, add hard boiled eggs (more than I used to use with potatoes) and any other bits of veggies like just a few fresh green peas in season (for colour!), and, of course, onion. Mayo as usual and let stand in the fridge for a couple of hours to meld flavours - most people don't suspect it's not really potatoes!
