Werebear- good luck!

We have the day off due to an ice storm, so I thought I would do a dinner that takes more work than usual- mussels in wine sauce and artichokes dipped in herb vinaigrette.

I was MIA the last few days, but had a great dinner on Saturday, at a restaurant for my Dad's birthday.
I had a wedge salad with blue cheese, roasted beets and tomato.
I also had a smoked salmon appetizer, but it wasn't lox style. It was in a fillet. It was excellent.
Glass of some type of red wine (I forget what)

I made some chili last night. Tonight, I'm going to heat some of it up in a sauce pan and poach an egg on it.

I made corned beef a bit early so it would be ready for tomorrow - had that a few nights with the cooked celery root, carrot, and onions in the crockpot - I'll make the cabbage tomorrow - there wasn't room for it and finish the corned beef. The rest of the week including tonight I've made sauteed tofu salad with romaine, spinach, radishes, sharp cheddar and homemade Ranch dressing. It's nasty hot here - 90s.

Hi Robyn! It's my go -to in a pinch. Easy and fast. And light!

Last night I was so tired and it was late, I just dipped the unadorned tofu in mayo and called it dinner.

Tonight - we'll see. I have a lot to do and am working today.
Hoping to make a Spring Power Salad w/salmon on top and Buttermilk Dressing ... here's hoping.

I made pulled pork in the crockpot with a pre-seasoned vacuum pack of pork that was on sale, and I was kind of disappointed. It's reeeeeealy smoky. If I buy it again, I'll add a can of tomato paste to balance it out a bit. Maybe it'll taste better tomorrow after it's sat in the fridge.

Used leftover chicken with spicy mustard to pair with carrot "fries." I could tell DH didn't love them, but he ate them, and I thought they were great....so I guess that's an occasional recipe.....

Tonight is another stab at encouraging him to eat more variety with veggies. Using zucchini to make boats, loaded with melted cheddar, salsa, and sour cream. Sunny side eggs for protein.

I made the Salmon salad once, then it was fast sauteed tofu salads with cheese, orange pepper, and homemade Ranch dressing.
Last 2 nights ago: the owner of the house is back for a visit and he brought me nachos sans chips, but they had refried beans mixed in....I ate them and blew up like a balloon... last night he brought Buffalo Wild Wings. I had the Desert Heat Rub king and the Medium Buttery. Carrots and celery with Blue Cheese Dressing. Not the greatest for me but oh well.

Tonight I am making those Grilled Asparagus Harvarti Cheese sammies for us - mine will be with egg crepes as "bread" and his will be normal with bread. I am having beer. He's only here til the 1st.

Oven roasted chuck roast. Some herbs and then a can of chopped tomatoes dumped on top as a quicky marinade. Came out awesome.

Have to get back into cook once, eat thrice.

Last night was mixed greens salad with chicken and avocado, Homemade Buttermilk Ranch - tonight I am making Sauteed Garlic Shrimp Salad.
